Best Oven Roasted Chicken

Ingredients
Serves 4-6 - Preparation time 30 minutes
Preheat oven to 350°F to 300°F - Cooking time: 1 1/2 hours

(1) whole chicken, we prefer free range organic
(10) garlic cloves
(1) halved lemon, squeezed - save the pressed lemon halves
(4) tbsp olive oil
(3) sprigs rosemary
(3) tbsp parsley, finely chopped
(3/4) tsp paprika
(1) tsp kosher salt
(1/2) tsp fresh ground black pepper

Place the garlic, olive oil, parsley, paprika, lemon juice, kosher salt and ground pepper in a food processor and blend into a paste. Pull away the skin from the chicken breasts and work the paste in between the skin and meat. Take the remainder of the paste and spread evenly over the entire chicken. Place lemon halves and rosemary sprigs inside the back cavity. Place the chicken in a ziplock bag and remove as much air as possible. Place in the refrigerator overnight.

Heat the oven to 350° and bake for 45 min. Turn down the oven to 300° and continue to bake until the inner breast temperature reaches 170° F. This should be around 1 1/2 hours of total cook time.

Allow the chicken to set for 20 minutes before slicing and serving. As an alternative, you can bake the chicken over a bed of seasoned and oiled root vegetables. Serve with a crisp salad and tangy apple cider vinegar dressing. Bon appétit from our family to yours!
