Cucumber Chutney

Ingredients
Serves 4-6 - Preparation time 15 minutes

(2) small English cucumbers or Lebanese cucumbers.
(1/2) medium red onion - finely diced
(2) small red chillis (traditionally very hot)
(1/2) bunch of cilantro (coriander leaf)
(1) tsp lemon juice
(2) tsp honey
(2) tsp white wine vinegar
Salt and pepper to taste

Thinly slice the cucumbers & red chillis and finely dice the red onion. I recommend leaving the skin of the cucumber on as it aids in digestion. You can partially peel cucumbers in strips giving the slices a checkered edge. Chop the cilantro and combine with the vegetables, honey, lemon juice & white wine vinegar and drizzle with olive oil. Salt and pepper to taste just before serving. This is a traditional garnish from Mauritius (called Satini Concombre by Island locals) for a variety of dishes (mostly of Indian origin). It is meant to cleanse the palate from the spice overload of a well seasoned curry. Bon appétit from our family to yours!
