Lasagne

traditional lasagna

Ingredients
Serves 6 - Preparation time 30 minutes
Cooking time: 30 - 45 minutes

The Meat Sauce
(1) lb grass fed ground beef
(2) cloves of garlic, minced
(1) tbls extra virgin olive oil
(1) 28 oz can of whole tomatoes (Cento San Marzano whole tomatoes work well)
(2) 6 oz cans of tomato paste
(1) tbls oregano (can substitute (2) tsp fennel seed, (1) tsp dried basil & (1) tsp oregano for a sausage-like flavor)
(1) tsp sea salt
(1/2) tsp fresh ground pepper

The Cheese Filling
(3) cups ricotta cheese (can substitute with whole milk cottage cheese)
(1/2) cup grated parmesan
(2) eggs, beaten
(1) tsp sea salt
(1/2) tsp fresh ground pepper
(2) tbls fresh parsley, chopped

(1) pkgs of lasagna noodles (boiled to al dente, drained and set aside)
(1) lb mozzarella cheese, grated

In a small dutch oven or sauté pan, brown the ground beef and drain. Bring the pan back to heat and add garlic. Sauté for 1-2 minutes then add tomatoes, tomato paste, and seasoning. Sauté for another 20 minutes and set aside. Mix the cheeses, eggs, seasoning and fresh chopped parsley. Grate the mozzarella cheese and set aside. Butter a 9x13 casserole dish. Layer beginning with noodles, cheese mixture, meat sauce and grated mozzarella. Repeat for a total of 3 layers, ending with noodles on top. Reserve a little sauce for the top layer of noodles. Spread a layer of mozzarella cheese over the top and bake at 375° F for 30 to 45 minutes. Let stand for a full 10 minutes before slicing and serving. We serve lasagna with a crisp salad and tangy dressing. You can also add a warm slice of tuscan pane and grass fed butter to round out the meal. Bon appétit from our family to yours!
