Romanian Chicken Soup
Ingredients
Serves 4-6 - Preparation time 30 Minutes
Cooking time: 1 hour
(1) tbl extra virgin olive oil
(1) onion chopped
(2) celery ribs, diced
(2) carrots diced
(1) red bell pepper, diced
(6) chicken thighs, skin removed and fat trimmed off
(12) cups water
(1) carrot, chopped into 6 large pieces
(1 1/2) tsp ground coriander
(1) 8 oz can tomato sauce
(1/2) cup fine egg noodles
(1) tsp salt
(2 1/2) tsp Vegeta Natur (all natural)
In a stock pot, sauté onions, celery, grated carrot, and bell pepper in olive oil until soft. Add the chicken thighs and cover with water. Stir, cover and simmer slowly until chicken is tender. Skim impurities from the top and remove. Add tomato sauce, salt, Vegeta, parsley and egg noodles to the soup and stir. Continue to simmer until noodles are soft. Serve with a squeeze of lemon juice and parsley garnish on top.
