Lemon Rosemary Garlic Chicken

Serves 4-6 - Preparation time 30 Minutes

(6) pieces of chicken
(1) lemon rind, grated
(1) lemon juiced
(3) sprigs of rosemary, finely chopped
(8) garlic cloves, crushed or thinly sliced
(1/2) tsp sea salt
(1/4) tsp freshly ground black pepper
(1 1/2) tsp ground coriander
(1/8) cup extra virgin olive oil
(1) lemon, thinly sliced
Place chicken pieces in a large ziplock plastic bag. Add the grated lemon rind, lemon juice, chopped rosemary, garlic, salt, pepper, olive oil and sliced lemon. Seal the bag tightly and mix thoroughly. Refrigerate marinating chicken 6-24 hours. Place in baking dish and bake chicken skin side up along with marinade and lemon slices.
