Sweet & Sour Chicken
Ingredients
Serves 4 - Time 30 Minutes (we triple this recipe for our family)
(1) lbs boneless skinless chicken breast - cubed
(1) tbls oil - expeller pressed canola oil works well
(1) cup of red and green bell peppers - cut into strips
(1) tbls cornstarch
(1/4) cup soy sauce
(1) can 8oz pineapple chunks in juice
(3) tbls vinegar
(3) tbls brown sugar
(1/2) tsp ground ginger
(1/2) tsp garlic powder
Cook and stir the chicken pieces in hot oil in a large skillet until browned. Add the peppers. Stir and cook for 1 minute. Mix cornstarch and soy sauce. Add this mixture to the pan with the pineapple and juice, vinegar, sugar, garlic and ginger powder. Bring the mixture to a full boil for 1 - 2 minutes. Serve over white rice. You can use chopped green onions as a garnish.
