Mirin Chicken
Ingredients
Serves 4-6 - Preparation time 30 minutes
Cooking time: 1 hour
(8) pieces of chicken
(3) tbsp. oil
(1) lb button mushrooms
(1/2) cup mirin rice wine
(1/2) cup soy sauce
(1) tsp. ground ginger
(1/2) tsp. white pepper
(2) cloves garlic - minced
In a dutch oven heat oil and brown chicken pieces on both sides. Add whole mushrooms. Mix together the remaining ingredients while the mushrooms are sautéing and pour over the chicken. Uncover and cook slowly for 15 minutes, stirring occasionally, then cover and cook on low heat until chicken is done. Serve over white rice with sautéd vegetables.
