Spinach, Cheddar & Pancetta Quiche

Ingredients
Serves 4-6 - Preparation time 30 minutes
Preheat oven to 350° F
Cooking time: 30 - 45 minutes

Filling
(3) green onions - thinly chopped
(2) oz diced pancetta
(3) tbsp. butter
(1) 10 oz package of chopped spinach - thawed and drained
(1 1/2) cups half & half (known as half cream in the UK)
(4) eggs
(1/2) tsp. sea salt
(1/8) tsp. black pepper
(1) dash of nutmeg

Pie Shell
(1) Pastry shell or pie dough placed in a 9” pie pan
(1) cup sharp cheddar cheese

Pie Shell
If using a pastry shell, bake frozen shell for 6 minutes. Remove and set aside. If using pastry dough, simply roll out and fit into a 9” pie baking or dish.
Filling
In a non-stick skillet, sauté the butter, pancetta and green onions for 3 minutes on medium heat to unlock the smoky flavor of the pancetta. Add the spinach, mix thoroughly and cook for an additional 3 minutes. Beat the eggs in a mixing bowl and add the cream, seasoning and spinach mixture. Evenly distribute the cheddar cheese in the pie shells and pour in the filling over the cheese. Place in the oven and cook at 350° F for 30-45 minutes. Serve either slightly warm or cold with a vegetables or salad.
